Neapolitan vs NY pizza

Not all pizza is created equal!

There are several ways that Neapolitan-style pizza differs from the NY-style that comes to most Americans’ minds when they think of the dish.

The Crust

The most notable difference is the pillowy, chewy crust made initially to be eaten with a fork and knife. You can find exquisite flavors in the charred spots of the wheat flour crust. In contrast, New York pizza (which came from Italian immigrants) has a thinner, crispier crust that’s made to be eaten with your hands while on the go.

The Cheese

Italians make their pizza in high-temperature wood-burning ovens, so using fresh slices or globs of mozzarella is no problem. Americans began using gas-powered ovens and shifted to low-moisture shredded mozzarella to accommodate the longer cook times.

The Sauce

Neapolitan-style pizza sauce is beautifully simple. The only ingredients are Italian-grown tomatoes and salt to allow for the natural acidity of the tomatoes to shine. Americanized pizza sauce has a few extra ingredients, including sugar, garlic, and herbs.

The Size

Initially made to be single-serving dishes, pizzas measured about 12″ in diameter. When it was brought to the US and adapted for the “on-the-go working man,” it was made into 18″ pies or larger to be served by the slice.

This is my new favorite Italian restaurant! It is small, intimate (albeit a little chaotic/festive), and charming. With many of the patrons speaking Italian, I feel like this is authentic Italian fare (that and the taste of the food is authentic). I feel like I am in an Italian home kitchen where I have been invited for dinner. There is a typical 20 minutes wait here because folks in the surrounding area know this is the best Italian!
